  2. Carefully wash the spinach, hull it, pat it dry, and cut it into thin strips. In a bowl, roll them in flour.
  3. Add cottage cheese, nutmeg, salt, and pepper to the egg mixture. Mix well and pour over the spinach.
  4. Add a few slices of seitan (optional) and pour it all over the pre-cooked tart base. Spread well and sprinkle with grated cheese.
